Afghan Paneer Salad with Pomegranate Vinaigrette

Chef Zainab brings whole milk to a gentle boil, then adds lemon juice, and stirs until the milk curdles. Once curdled, she strains it through cheesecloth and rinses the cheese to get rid of any lemon flavor. After straining, Chef Zainab presses the paneer to get a perfectly-shaped block of cheese. Chef Zainab then cuts the panner into bite-sized cubes. The base of this salad consists of fresh chopped romaine lettuce, and also features cherry tomatoes, red onions, roasted chickpeas, and cucumbers. The tomatoes and onions add brightness, while the cucumbers add a refreshing bite.
