Asa Wot (Spicy Buttered Seafood Stew) with Injera Bread
Asa Wot is a classic Eritrean and Ethiopian seafood dish. Chef Yebralem uses fresh ginger, traditional berbere spice, and garlic mixed with butter to create a robust thick sauce that she slow-cooks cuts of wild codfish with. A fresh tomato puree is added to the stew to create a slightly sweet and tart flavor too. The dish is best enjoyed with injera bread to scoop up all the unique flavors in one bite.
