Chicken Khao Soi (Luang Prabang-Style Big Noodle Soup)
We are so excited to bring you this special dish found uniquely in the northern region of Laos. Chef Mam's recipe is inspired from her time in the city of Luang Prabang, where she learned and cooked with her family this special dish. The dish is specifically served with wide (big) rice noodles, giving a filling and slurp-filled texture. She starts the dish by crafting a savory and aromatic chicken stock. Layered on top of the noodles is her homemade bright red bolognese sauce, made with minced chicken, fresh tomatoes, chili peppers, and fermented soybean paste. The dish is best enjoyed by sinking in some fresh mint, lettuce, cilantro, and a squirt of fresh lime over the top.
