Koofteh Tabrizi (Stuffed Beef Meatballs)
This is a dish you can only find in Tabriz, Iran, Chef Mina's hometown. The ingredients are unique to Tabriz and so is the technique of forming and cooking the meatballs. She learned to make the dish from her mother-in-law, as it takes a delicate technique to create the perfect blend of beef, yellow split peas, tarragon, basil, turmeric, and mint. It took her years to perfect the technique to create the tender texture and savory-sweet flavor. Made by hand over countless hours, women in Tabriz only make this dish for special people or occasions. If a chef makes this dish for you, you can count yourself as someone very special to the chef.
