Ping Kaduk Kang (Lao-Style BBQ Pork Ribs & Sweet and Spicy Tamarind Sauce) with Sticky Rice
Ring in the warmer weather with Chef Mam's delicious Ping Kaduk Kang! Chef Mam takes BBQ ribs and infuses them with traditional, Lao flavors. She starts by making the marinade, using garlic, lemongrass, oyster sauce, and pandan leaf to create a savory and fragrant flavor profile. She then lets the pork spare ribs soak in the marinade, allowing the meat to absorb all the amazing flavors. Once seasoned, Chef Mam slow-grills the ribs over low heat, allowing for the ribs to develop a crispy, caramelized outside, and still remain tender and juicy inside. After the ribs are finished cooking, Chef Mam serves it up alongside freshly steamed sticky rice and her homemade tamarind sauce. This dish is the perfect balance of flavors. The dipping sauce's sweet, sour, and spiciness wonderfully complements the ribs savoriness. We recommend dipping the sticky rice in the sauce to experience all the amazing flavors.
