Kuku Lubia Sabs (Veggie & Potato Savory Pie)
A special dish from Chef Mina's home city of Tabriz, "Lubia"translates into beans while "Sabs" translates into green. The mixture of the potatoes, carrots and other herbs makes the dish special to the city of Tabriz, and it would be hard to find anywhere else in Iran. It has a wonderful light and savory taste, with the added heartiness of the chunks of potatoes. With a sprinkle of saffron on top, you'll be enjoying a local Tabrizi favorite right in your own home.
Ingredients: Green beans, potatoes, carrots, eggs, saffron, turmeric, black pepper, salt, cinnamon, rose water, canola oil
