Chicken Brochette (Ivorian-Style Kebabs) over Cassava & Sauce Tomate
A warm-weather delight, we're so excited to bring you this delicious West-African BBQ dish by Chef Veronique. Widely enjoyed around the world as a satisfying summertime dish, brochettes can be found in many different forms and tastes. Veronique's recipe starts with marinating tender cuts of chicken thigh overnight in her savory & tangy homemade parsley sauce, highlighted with lemon juice and dijon mustard. Fresh cut bell peppers and tomatoes are combined with the marinated chicken on skewers and then grilled to the perfect tenderness and smokey aroma. Her brochettes are wonderfully paired with fluffy cassava and her famous sauce tomate. Chef Veronique recommends enjoying the dish by lightly drizzling the sauce tomate over the top of the cassava, and then mixing in the grilled veggies and chicken to create the perfect bite.
