Gomen (Savory Kale Medley) with Injera Bread

Gomen is considered a delicious staple dish found throughout the Eritrean/Ethiopian region and you'll find many variations as well. Yebralem's recipe is packed with savory and bright flavors created by the assortment of veggie purees that make up the marinade for the fresh kale leaves. First, the kale is chopped and steamed to a slightly tender texture. Then it is slow-cooked with the marinade, consisting of ginger, garlic, onion, and tomato purees. Layered on top are juicy and delicious cuts of yellow zucchini. Gomen is vegan-friendly, but we think all food lovers can celebrate this dish!
