Kashke Bademjan (Eggplant & Walnut Dip) with Pita
A rich and creamy savory dip, Kashke Bademjan is the perfect side dish for any meal. Chef Mina first slow cooks eggplant until tender then mashes the eggplant into a creamy mixture. She then adds Iranian whey, ground walnuts and a mixture of dried mint, onions, and garlic to the dish. With a dash of salt and oil on top, the creamy dish is a great compliment to Mina's Kotlet or Adas Polo.
