Some would say this is the national soup of Laos, and we're excited for you to enjoy it as well. Chef Mam's recipe has been said to rival the best Khao Poon in DC. You'll just have to order it and try for yourself. ;-) If you're a fan of ramen or pho, this is a must eat! Traditional Khao Poon uses ground pork, however Chef Mam is changing it up by using tender chicken as the main protein. The base of her recipe is an amazingly aromatic broth. Chef Mam infuses rich coconut milk with herbs and spices like mint, lemongrass, galangal, and spicy red curry. She sautés boneless cuts of chicken, and carefully shreds the tender meat into fine pieces. She then slow-cooks the meat and delicious bamboo shoots in the creamy broth, creating a hearty and fragrant soup. The dish is accompanied with yummy rice noodles and a plethora of fresh vegetables to add to the broth. Try this piquant dish on a cool day; it is perfect for warming your body and mind.
