Kawulo Fuori (Yellow Curry Cauliflower Medley) with Injera
Not your average vegetable medley, this dish packs a punch. Chef Yebralem transforms this cauliflower into a colorful yellow that is as vibrant in hue as it is in flavor. She mixes sauteed bell peppers and carrots to sweeten the cauliflower which is naturally bitter. Finally, she adds pieces of cilantro on top to bring out the spices in the curry. It is best to eat with some soft injera bread to soak in all the curry juices so that you do miss a single bit of the flavor.
