Chef Mem has created a Vegan friendly dish inspired from her Nam Pa Tilapia lettuce wraps dish. She lightly fries tofu to a golden crisp and mixes in rice noodles, Thai eggplant, and other delicious ingredients. Eaten in a lettuce wrap fashion, you lightly drizzle the accompanied sweet and spicy sauce on top of each wrap, creating a perfectly refreshing bite for these hot summer days!
