Beef Tibs with Injera Bread
Each bite of this delicious dish will melt in your mouth. It is a popular dish eaten during high holidays in Eritrea and Ethiopia. Chef Yebralem begins by reducing unsalted butter to a golden brown color and using it to slow-cook freshly cut onions, garlic, and bell peppers for a caramelized texture. Then, she removes the vegetables to focus her attention on preparing the steak. She slices tender beef into hearty pieces and proceeds to sauté each piece to perfection in her buttery marinade, creating nicely charred edges on the steak. After a final cooking of the vegetables with the beef, she enjoys the dish by placing a generous helping on top of injera bread. You will not be able to resist the buttery, savory flavors!
