Lao Summer Feast for Two
We're so excited to bring you our Lao Feast for Two! This delicious meal highlights two incredible dishes from Chef Mam.
For the Ping Gai, Chef Mam marinates and infuses chicken with fresh lemongrass, garlic, & cilantro. The chicken is then lightly grilled to create the perfect crispy and juicy combination, while also enhancing the aromatic sweet and savory flavors that fill each bite. After the chicken is grilled to perfection, it is served alongside Chef Mam's homemade sweet and spicy tamarind sauce and a helping of fresh sticky rice.
For the spicy-tangy papaya salad, Chef Mam shreds green papaya to create the base of this salad. She then seasons it with tamarind, lime juice, fish sauce, and chili peppers to give the papaya salad its classic sour-savory-spicy flavors. To provide some extra freshness to this salad, Chef Mam adds Thai eggplants, shredded carrots, and cherry tomatoes. Chef Mam's papaya salad is the perfect dish for summer. It is savory and salty, but still light and refreshing. It's great for eating on its own or paired with other dishes.
