One-Pot Chicken Jollof Rice
This one-pot chicken jollof rice is packed full of flavor! Jollof rice is an incredibly diverse dish found in many West African countries, taking on different flavors and preparation styles depending on the region. With our jollof rice, we start by browning chicken in a pot alongside some aromatics. Once the chicken is partially cooked, it is removed and our homemade tomato-bell pepper-red onion puree is poured into the pot. The puree is cooked down until it's a nice thick sauce, then it is seasoned with a blend of herbs before adding water. Once the pot comes to a boil, jasmine rice and the chicken are added back to the pot and sealed tightly to let everything simmer until the rice and the chicken are perfectly cooked. This dish is the perfect balance of textures and flavors! The jollof rice is fluffy and tangy, complementing the juicy savoriness of the chicken. This dish is delicious as a standalone and also pairs wonderfully with other dishes and sides.
