Qabuli, also spelled as Kabuli, is a beautiful dish with a rich history. In its origin, qabuli was a dish created by the upper-class families in Kabul. Ingredients like caramelized carrots, raisins, and nuts were traditionally included in this rice dish, and were also what made it so expensive. As Afghanistan became wealthier, qabuli became more accessible and common. It even went on to become Afghanistan’s national dish! In Chef Zainab’s take of qabuli, she includes the traditional ingredients like shredded carrots and raisins, and seasons this rice dish using Masala e Polau. Masala e Polau is a specialty blend of amazing spices. The mix and ratio can vary between people and households, but contain spices such as cinnamon, bay leaves, coriander, cardamom, and cloves.
