Larb Khai with Sticky Rice (Tender Spicy Chicken & Herbs Salad)
Filled with fresh and local vegetables, this dish is full of surprises. Larb is a tasty salad dish that can be made with steak, chicken, or fish and is considered the unofficial national dish in Laos. Chef Mam prepares this dish with chicken, first by slow cooking tender cuts of chicken breast. She then infuses a smokey flavor by finishing the chicken on a hot grill. With each piece of chicken, she finely minces the meat and marinates it with savory fish sauce and peppery chilis. She adds aromatic lemongrass, shallots, lime leaves, and mint to top off the dish. It's the perfect dish to share, and Chef Mem especially loves this dish with her sticky rice!
