Misir Azifa (Green Lentil Salad) with Injera Bread
This dish can be found in many households throughout Eritrea and Ethiopia as it's common and quite popular. Yebralem first steams the green lentils until tender, then she hand mashes the lentils to a texture similar to American mashed potatoes. Throughout this process, she mixes in herbs like cilantro and garlic, with vegetables and jalapeno peppers for an added hint of spice.
