Koa Pak (Sweet Vegetable Stir Fry with Jasmine Rice)
A colorful veggie medley, this dish has many unique textures and flavors. Chef Mam prepares her stir fry by utilizing lots of her favorite vegetables. She combines chopped broccoli, carrots, and white beech mushrooms with an umami-rich soy sauce marinade before turning up the heat. Once the vegetables have soaked in all the rich flavors, she turns her attention to the rice. Chef Mam pays special attention to cooking her jasmine rice, so that is nice and fluffy when finished.
