Eritrean Zigni Sauce Recipes

Eritrean Zigni Stew (Buttered Berbere Stew)

INGREDIENTS NEEDED: Zigni Sauce - 1 Jar, Chicken Thigh Boneless/Skinless - 1 lbs, Small Potato x1, Garlic - 3 Cloves, Salt - 2 tsp, Water - 1 Cup, Vegetable Oil - 2 tsp

ZIGNI PREP) Potato - peel and dice into 1/2 inch pieces and set aside. Garlic - Peel and finely dice. Chicken - slice the chicken into 1/2 inch pieces.

STEP 1) Place a medium stock pot on the stove, and set to medium heat. Add in the oil and diced garlic. Simmer for 1-2 minutes. Next, pour in 1 jar of the Zigni Sauce and let it simmer for about 5 mins, or until it begins to sizzle.

STEP 2) Add in your chicken, potatoes, water, and stir everything together. Next, sprinkle in the salt and then cover with a lid for 15-20 minutes. Every 5 minutes lift off the lid and stir occasionally. Now, you're ready to eat!

STEP 3) Enjoy with your favorite flatbread, pita bread, or basmati rice. If you have access, you can enjoy the dish the most traditional way with INJERA Bread, which can be found at your local Ethiopian or Eritrean market.

TIPS & IDEAS) For the protein you can substitute in anything you prefer if you're not a fan of chicken. Beef, lamb, split peas, chickpeas, lentils, etc... For beef, any of the following work well: ground beef or brisket/sirloin/knuckle. For lamb, any of the following work: ground lamb, boneless lamb leg. For peas or lentils, make sure you presoak the legumes so they cook thoroughly and are tender.

Afghan Gormeh Sauce Recipes

Chicken Gormeh (Afghan Slow-Cooked Chicken with Basmati Rice)

INGREDIENTS NEEDED: Gormeh Sauce - 1 Jar, Chicken Thigh Boneless/Skinless - 1 lbs, Green Bell Pepper - x1, Ground Coriander - 1 tsp, Black Pepper - 1 tsp, Salt - 2 tsp, Water - 1 Cup, Green Onions - 1/2 bunch, Basmati Rice - 4 Cups, Salt - 1 Tbsp

RICE COOKING) Rinse and wash rice for 60 seconds and then soak rice in water for 30 minutes. Next, in a medium stock pot, fill with water to half full and turn on medium high heat. The water is ready when you reach a light boil and steam. Add 1 Tbsp of salt in the boiling water and stir. Finally, add the rice in the water and mix in thoroughly. Cook for 5 minutes, no cover needed, and stir occasionally. The rice should be ready after 5 minutes and the texture should be slightly soft. Pour the pot in a strainer to remove the water and you're ready to enjoy. Feel free to mix in more salt if you prefer.

GORMEH PREP) Green Bell Pepper - with a knife, slice halfway into the bell pepper and remove the core, then discard. With the outer shell, unroll it into a long piece, then slice into long thin strands (julienne slice). Chicken - Slice the chicken into 1 inch pieces and set aside. Green Onions - Dice the green onions into 1/4 inches pieces and set aside.

STEP 1) Place a medium stock pot on the stove, and set to medium heat. Pour in 1 jar of the Gormeh Sauce. Next add in 1 Tbsp of water and simmer for 1-2 minutes until it begins to sizzle.

STEP 2) Add in your chicken, coriander, salt, black pepper, remaining water, and bell peppers. Stir everything together and then cover with a lid for 10-15 minutes.

STEP 3) Every 5 minutes stir occasionally. When the meat and bell peppers are tender, you're ready to eat! Sprinkle the green onions over the top of the Gormeh and enjoy.

Lao Chili Cooking Oil Recipes

Lao Kua Sen Lon (Glass Noodle Stir-Fry)

INGREDIENTS NEEDED: Soy Sauce - 1 Tbsp, Oyster Sauce - 1 Tbsp (or vegetarian-style oyster sauce), Sugar - 1/2 Tbsp, Vermicelli Glass Noodles - 1 Pack, Vegetable Oil - 1 Tbsp, Eggs - x2 (optional), Black Pepper - 1 tsp, Broccoli - 5 florets, Cauliflower - 5 florets, Carrots - 1 piece diced, Chili Oil - 1 Tbsp, Water - 1/2 Cup

PREP) Boil a pot of water and place your broccoli, cauliflower, and medium diced carrots in for 5 minutes. Remove veggies from the pot and run under cold water for 60 seconds. If you prefer smaller broccoli/cauliflower florets, you can slices those in half, then set your veggies aside. Next, soak 1/3 of the pack of glass noodles using the warmest sink water you have for 5 minutes.

STEP 1) Place a large sauce pan on the stove, set to medium-high heat. Add the vegetable oil and simmer for 1-2 minutes. Add your eggs and scramble until just lightly runny. Next add your noodles and 1/2 a cup of water. Then, mix in your veggies, and pour the soy sauce, oyster sauce, black pepper, and sugar over the top and mix everything together for 2-3 minutes.

STEP 2) Mix the Chili Oil into the noodles, ensure it is an even mix of oil and chili flakes. Stir for 30-60 seconds and Enjoy! Add more Chili Oil if you like things extra spicy =).

Ivorian Sauce Tomate Tips & Ideas

For Dipping with Kebabs, Samosas, Savory Pastries

STEP 1) Place a medium stock pot on the stove, and set to medium heat. Let it sizzle for 1-2 minutes. Take a few stems of Italian Parsley and pick the leaves. Finely dice the leaves and sprinkle over the top of the sauce. Now you're ready to enjoy.

TIPS & IDEAS) This is a great sauce for dipping breads. Also if you have meat or vegetable kebabs, this work perfectly for dipping. Any kind of savory pastry like samosas or croquettes are scrumptious with this sauce also.

For Marinades and Marinara-Style

MARINADES) For BBQ or seasoned meats, this is the perfect marinade. When you're ready to season your favorite meat for BBQ or a Roast, use 1 jar of Sauce Tomate to marinate your entire selection of meat. Place the marinaded meat in the cooler and cover it for at least 8 hours. After that, you're ready to cook your meat.

MARINARA-STYLE) Sauce Tomate is a wonderful option to use as a marinara sauce. For oven-baked flatbread or sliced baguette, use a thin layer of Sauce Tomate to cover your bread, add some shredded cheese on top. Next, bake as you normally would and enjoy! If you're looking to make some homemade pizza, apply a think layer of sauce tomate on your pizza dough and apply your toppings afterwards as you normally would. Next, bake your pizza in the oven as you usually do, and bon appétit!
