Larb Khai with Sticky Rice (Tender Spicy Chicken & Herbs Salad)
Filled with fresh and local vegetables, this dish is full of surprises. Larb is a meat salad that is considered the unofficial national dish in Laos. Chef Mem combines thick cuts of the white chicken breast with the appetizing fish sauce and peppery chilis so that the chicken can soak in all the rich flavors. She adds aromatic lemongrass and mint for a light finish. Chef Mem especially loves this dish with her sticky rice!
