Naem Khao is a widely popular dish in the Lao community, often made for friends and family as a sign of love and appreciation. To make this dish, we steam a large batch of fresh jasmine rice, then marinate it with red curry, shredded coconut and lemongrass. The marinated rice is then formed into small spheres, and then lightly fried to a crispy, golden brown. A hearty mix of fresh lime juice, crispy chickpeas, red onions, crushed peanuts, and fresh herbs are served alongside to complete the salad. This dish is a party in your mouth, perfectly blending sweet, savory, spicy, and tangy flavors. We recommend crushing the rice balls and mixing all the toppings together while. Drizzle and mix in the naem khao dressing, then take a spoonful of the salad mix and lay it over a small lettuce leaf (provided), creating your own delicious lettuce wrap.
