Pinangat (Creamy Salmon) with Jasmine Rice
In the words of Chef Wing, "This may be the best salmon you've ever had". Seafood is one of the main cuisine styles on the island of Palawan. Many meals are made daily with the fresh catch of the day and Chef Wing perfected his Pinangat dish cooking for many guests during his cooking days on the island. Wing first creates a creamy broth of tomatoes, chopped onions, lemongrass, coconut milk, and small cuts of salmon. Simmered over a few hours, salmon fillets are then bathed in the broth until tender. Once cooled for a bit, the creamy broth is poured over the fillets and enjoyed with a steamy batch of jasmine rice.
