Chef Veronique learned to prepare this recipe on the ocean coast, where her family once operated a seafood restaurant. Veronique infuses her own style into the dish by using red snapper fish. She first marinates the boneless fillets in a delicious homemade sauce made up of fresh parsley, green onions, and dijon mustard. After the fish is infused with this savory and tangy sauce, Veronique grills the red snapper to perfection while maintaining a light and tender texture. The fish is then served over her famous Ivorian rice seasoned with bay leaf, turmeric, and thyme, and accompanied with Veronique's delicious homemade spicy tomato sauce.
